First of all, sift flour and baking powder into a small bowl. Stir well with a whisk and set aside. Combine the softened butter with sugar and whisk. Add the egg and vanilla extract (almond is also perfect for the recipe for raspberry cookies) and beat until smooth
When all the cookies are ready, they can be sent to a preheated oven and baked at medium temperature for about 20 minutes.
Then gradually add the flour mixture, kneading a homogeneous dough without lumps. This may take some time, but the dough should be soft and fluffy
With jam, everything is quite simple, but fresh berries are best combined with sugar and rubbed through a sieve. You can also add them in their entirety if you wish. You can also use frozen berries in this simple raspberry cookie recipe by boiling them a little over low heat with sugar.
Cover the baking sheet with baking parchment. Divide the dough into small balls, in the center of which make grooves. Carefully place the raspberries there so that they do not run out.
When all the cookies are ready, they can be sent to a preheated oven and baked at medium temperature for about 20 minutes.
No need to wait until the top is very browned, otherwise the raspberry biscuits at home can be dry. After cooking, you need to cool it properly, and then you can serve it to the table, sprinkle with powdered sugar, for example
