Ingredients
- 2 egg (s)
- 400 g rocket
- 1 onion (s), red
- 4 tablespoon sour cream
- 1 teaspoon mustard, medium hot
- 4 tablespoon oil
- 2 tablespoon white wine vinegar
- 1 tablespoon sugar
- salt
- pepper
- 1 tablespoon chives, cut into rolls

- Hard boil eggs in about 10 minutes.
- In the meantime, wash the rocket, spin dry and pluck into pieces.
- Peel the onions and cut into thin rings and arrange both on a platter.
- Rinse the eggs, peel them, let them cool down a bit and chop them finely.
- Mix eggs, sour cream, mustard, oil, vinegar, sugar, salt and pepper into a sauce and pour over the salad.
- Serve sprinkled with chives.
