Sandwiches with Mushrooms, Broccoli and Red Pepper

Ingredients

  • Broccoli – 1 small head
  • Olive oil – 1 tbsp
  • Salt pepper
  • Portobello mushrooms or royal champignons (large caps) – 4 pcs.
  • Sweet pepper, red – 2 pcs.
  • Light mayonnaise – ¼ glass
  • Garlic – 1 small clove
  • Homemade white bread – 4 thick slices
  • Gouda cheese – 115 g

Directions

  1. Divide the broccoli into florets. Cut the mushroom caps and peppers into 1 cm strips. Squeeze the garlic in a garlic bowl. Slice the cheese thinly.
  2. Preheat the broiler. Place the wire rack at a distance of 10 cm from the fire. Cover the baking sheet with foil. Toss broccoli with olive oil. Season with salt and pepper to taste. Fry the broccoli under the broiler for 4-6 minutes (stir once or twice).
  3. Add mushrooms and peppers to a baking sheet. Season with salt, pepper, and stir. Roast under the broiler for 8-10 minutes, stirring once or twice.
  4. Combine mayonnaise and garlic. Add salt and pepper to taste. Spread garlic mayonnaise on slices of bread. Place the vegetables, mushrooms, and cheese on the greased bread.
  5. Place the sandwiches on a baking sheet and bake under the broiler for 2-4 minutes to melt the cheese.
