Semifreddo Berry Cake with Warm Chocolate Sauce

Whipped cream ice-cream cake with coffee-nut meringue and berries. Served with semifreddo berry cake with warm chocolate-cream sauce.

Ingredients

  • Cream 35% fat – 600 ml
  • Egg whites – 3 pcs.
  • Hazelnuts (raw) – 50 g
  • Instant coffee – 1 tbsp
  • Sugar – 100 g
  • Berries (different, to taste) – 500 g

For the sauce:

  • Dark chocolate – 150 g
  • Cream 35% fat – 150 g
  • Sugar – 1 tbsp
  • Butter – 25 g

Directions

  1. Preparing products for the semifredo cake.
  2. Fry the hazelnuts for 5 minutes in a dry frying pan.
  3. Beat the whites with a mixer until light foam. Add coffee to proteins. Whisk thoroughly.
  4. Add sugar. Beat until firm peaks.
  5. Cut the fried hazelnuts with a knife and add it to the protein mass.
  6. Using a silicone spatula, gently mix the whipped mass with nuts from bottom to top.
  7. We spread the meringue with nuts in a fireproof mold, covered with parchment paper. The layer should be no more than 2 cm high. We put the mold in the oven and prepare the coffee meringue with nuts for 3 hours at a temperature of 90 degrees.
  8. After 3 hours we take out the form from the oven, break the cooled meringue into pieces.
  9. Whip the cream into a dense foam.
  10. Add the meringue pieces to the whipped cream and stir gently.
  11. We cover the detachable form with parchment paper and cling film.
  12. Put a third of the whipped cream with meringue in a mold.
  13. Put on the cream and distribute half of the washed and dried berries.
  14. We spread another third of the cream with meringue and the remaining berries on top.
  15. Put the remaining cream and meringue on the berries.
    Cover the dessert with cling film, put a plate on top and press it lightly. We put the ice cream cake in the freezer overnight.
  16. Prepare the chocolate sauce before serving the frozen semifredo cake. Pour sugar into the cream. Put the saucepan on the fire and bring the cream and sugar to a boil.
  17. We rub dark chocolate on a grater.
  18. Add chocolate and butter to the cream.
  19. Reduce heat and cook sauce until chocolate is completely melted. Pour the sauce into a gravy boat and let it cool slightly.
  20. Serve semifredo berry cake with warm chocolate sauce.
