Ingredients

  • 1 large can (s) beans, white with soup greens
  • 100 g bacon
  • 1 onion (s)
  • 2 tablespoons oil
  • 30 grams flour
  • 500 ml vegetable stock
  • 1 bay leaf
  • salt and pepper
  • vinegar

Instructions

  1. Drain the beans in a colander and rinse well. Finely dice the bacon and onion.
  2. Heat the oil in the pan, allow the bacon and onions to turn translucent. Dust with flour and sweat. Deglaze the roux with the vegetable stock, add vinegar to taste. Add the bay leaf and beans and simmer over a low heat for 15 minutes.
  3. Remove the bay leaf and season the beans with salt and pepper. It is best to serve spaetzle with it.
