Spanish Almond Cake

Ingredients

  • Almonds – 100 g
  • Eggs – 3 pcs. (divided into whites and yolks)
  • Sugar – 100 g for the cake, 50 g for the syrup
  • Juice and zest of 1 orange
  • Flour – 1 tablespoon.
  • Liquor – 1 tablespoon. (optional)
  • Cinnamon
  • Powdered sugar
  • Almond petals – a handful
  • Salt

Directions

  1. Grind the peeled (white) almonds in a blender.
  2. Whisk the egg whites adding sugar gradually until smooth and homogeneous.
  3. Add the whipped egg yolks, almonds, orange zest, flour, and a little salt. Mix everything well.
  4. Grease a mold with some butter, put the batter in it, and bake the cake for 35-45 minutes until soft in the oven preheated up to 150 degrees.
  5. Bring the orange juice to a boil, add sugar and liquor optionally, boil the syrup for 1 minute, and cool it down.
  6. Take the baked cake out, cool it down for 5 minutes in the mold, and flip it over onto a plate.
  7. Make small holes in the cake surface and drip it with the syrup. Before serving, decorate it with almond petals and sprinkle it with cinnamon and powdered sugar.
