- I`ve baked a lot of cookie recipes that should taste like the famous chain, but I`ve always been disappointed. After a long search I finally found it and I don`t want to withhold it from you:
- Mix the butter and sugar with a hand mixer for 3 minutes until frothy. Add the eggs and stir for another 3 minutes until creamier.
- Mix the flour, baking soda and salt in a separate bowl and then add to the butter mixture and stir in with a spoon until a batter is formed.
- On no account use a hand mixer for this and do not overdo the stirring with the spoon. The dough is perfect when there is no more flour to be seen. Fold in the chocolate.
- Line a baking sheet with two layers of parchment paper. Preheat the oven to 190 ° C fan oven.
- Place plum-sized dough on the baking paper and press lightly. They should be the same size so that they bake evenly. When baking, they diverge and form perfect circles.
- Bake for 10-13 minutes. The cookies are still extremely soft when you take them out of the oven - but that`s normal. When they cool down, the biscuits are initially slightly curved, but then they collapse after a few minutes and form that delicious, soft biscuit core, as it is so famous at Subway. I let my cookies cool for 20 minutes.
- Tip:
- Instead of chocolate chips you can fold in any other ingredients. Then roughly chop the ingredients and add to the batter.
