Turkey Fillet with Pushrooms, in Dough

Turkey fillet baked in dough with mushrooms is ideal to serve on a festive table as a main course. Mushrooms and bacon give the dryish poultry fillet a bright taste, and the puff pastry makes the dish festive and tastier, keeping all the juices and aromas inside.

Ingredients

  • Yeast-free puff pastry – 500 g
  • Turkey fillet – 1 kg
  • Cream 20-33% – 120 ml
  • Fresh champignons – 500 g
  • Bacon – 220 g
  • Bulb onions – 2 pcs.
  • Butter – 60 g
  • Vegetable oil – 3 tbsp
  • Soy sauce – 2 tbsp
  • Thyme – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all the ingredients for the turkey fillet with mushrooms and bacon in the dough. Remove the puff pastry from the freezer (while you cook the filling, the dough will defrost)
  2. Cut the turkey fillet into three parts, about 3-4 cm thick. First fry in vegetable oil on one side for 2-3 minutes.
  3. Turn the meat over and sauté it on the second side for another 4 minutes. Salt and turn off the heat.
    (You do not need to cook until cooked, the meat will still cook in the oven.)
  4. Wash fresh mushrooms, remove the skin from the cap if necessary and chop coarsely.
  5. For the mushroom paste, grind the mushrooms in a blender. (Since the volume of my blender is small, I did it in two passes.)
  6. Fry the resulting mushroom gruel in butter until the liquid evaporates.
  7. Dice the onions finely.
  8. Add chopped onions to the mushrooms in the pan, and send dry thyme there. Fry the ingredients together until the onions are done.
  9. Pour the cream and soy sauce into the pan, add salt and pepper to taste. Cook until the liquid has evaporated and the mushroom mass looks like a paste. Set the paste aside to cool.
  10. We turn to the assembly of puffs with meat and mushrooms. Roll out a square of puff pastry so that you can wrap one of the pieces of turkey fillet in it – about 15 * 20 cm. Roll the dough on a table sprinkled with flour in one direction from the middle to the edge.Place the bacon on top of
  11. the dough as a substrate for the meat.
  12. Put some of the cooled mushroom paste on the bacon, evenly distributing it over the layer.
  13. Place the fried turkey fillet on top.
  14. Wrap the fillet with bacon. It should be topped with mushroom filling and bacon for juiciness.
  15. Wrap the dough in an envelope or any other way. Do the same with the remaining pieces of meat and dough.
  16. Grease all envelopes with turkey fillets with a beaten egg, after making cuts on top so that moisture comes out during baking.
  17. Place the meat in the dough in an oven preheated to 170 degrees. Bake the turkey fillet with mushrooms in the dough for about 20 minutes.
  18. Turkey fillet in puff pastry is ready. Let it cool slightly and serve.
