Zucchini Cupcake

A delicious recipe for zucchini – dessert bread (muffin) with zucchini. If someone in your family, especially children, does not like zucchini, then after trying this bread, they will definitely change their mind.

Ingredients

  • Zucchini or zucchini – 400 g
  • Sunflower oil – 1 glass
  • Eggs – 3 pcs.
  • Sugar – 1 glass
  • Wheat flour – 3 cups
  • Soda – 1 teaspoon.
  • Salt – 1 teaspoon
  • Baking powder – 1 teaspoon.
  • Ground cinnamon – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Chocolate granules (or raisins and / or nuts) – to taste

Directions

  1. Sift flour. Mix in a bowl with baking soda, salt, baking powder, and cinnamon.
  2. In a second bowl, mix together eggs and sunflower oil. Add sugar, vanilla extract. Send chocolate in granules there.
  3. Grate zucchini or zucchini on a coarse grater. Add 2 cups of grated zucchini or zucchini to the liquid mixture.
  4. Pour the contents of the first bowl into the second bowl and mix thoroughly. Pour the resulting mixture into a baking dish. Preheat oven to 165 degrees and bake zucchini cake (bread) until tender, about 1 hour.
