Cake “Rainbow”

A stunningly elegant cake! If you present this miracle to tea drinking on a summer evening, in the fresh air (maybe with a rainbow after a thunderstorm :)), the great mood of your guests will be a reward for their efforts. Although, to be honest, special work in preparing this cake is not required. The “Rainbow” cake recipe is quite simple.

Servings: 10

Ingredients

  • Eggs – 8 pcs.
  • Sugar – 1 glass
  • Flour – 1 1/3 cups
  • Baking powder – 2 teaspoon.
  • Butter – 100 g
  • Cocoa powder – 2 tablespoon.
  • Food paint pink – ¼ teaspoon.
  • Butter – 100 g
  • Cream cheese – 500 g
  • Powdered sugar – 2 cups
  • Fresh strawberries

Directions

  1. Preheat oven to 180 degrees. Beat eggs and sugar until three times the volume (within 8-10 minutes).
  2. Sift flour, mix with baking powder. Melt the butter. Gently and slowly whisk the flour and butter into the beaten eggs. Divide the dough into three portions. Add cocoa to one and mix gently. Stir in pink dye in the other part.
  3. Pour the dough into three parchment-lined tins with a diameter of 20 cm. Bake for 12-15 minutes (the cakes will move away from the edge of the mold). Cool on a wire rack.
  4. Beat the softened butter and cream cheese with a mixer for 6-8 minutes. Add the powdered sugar and beat for another 6-8 minutes until light, fluffy. Lubricate the first and second cakes of the cream. Grease the third cake and the whole cake with the remaining cream. Serve the “Rainbow” cake with fresh strawberries.
