Fish Baked with Carrots and Apples

Apples are a rather unexpected ingredient in a baked fish recipe. But do not rush to give up this idea! Moreover, the cooking process does not tire at all: on a vegetable pillow made of chopped carrots and onions, layout whole hake carcasses, greased with vegetable oil with spices, add apple slices and bake in the oven under foil. The fish becomes juicy. During baking, apples are saturated with fish juices and the aroma of spices, which makes it possible to serve them together with carrots and onions as a side dish.

Ingredients

  • Hake (carcasses) – 250 g (2 pcs.)
  • Apples – 250 g (2 pcs.)
  • Large carrots – 150 g (1 pc.)
  • Bulb onions – 100 g (1 pc.)
  • Dried herbs – 1 teaspoon
  • Seasoning for fish – 0.5 teaspoon
  • Vegetable oil – 45 ml (3 tablespoons)
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare foods according to the list. Instead of hake, you can take another low-bony fish (pollock or cod will do).
  2. Turn on the oven immediately so that it has time to warm up at the right time. I set the temperature to 200 degrees, but it’s better to focus on your oven.
  3. Cut the peeled carrots into quarters. Cut the peeled onion into quarters.
  4. Cut off the fins and tail of the fish (it is convenient to do this with kitchen scissors). Remove guts, if present. Wash the fish thoroughly, peeling off the black film inside.
  5. Combine vegetable oil (30 ml) with salt, black pepper, dried herbs (0.75 teaspoon), and seasoning for fish. Mix. Grease the fish from all sides with the resulting mixture.
  6. Cut off a piece of foil so that you can completely line the baking dish and then cover the contents on top. Put the foil in a mold and brush with the remaining vegetable oil. Put the carrots and onions in a mold, stirring together. Sprinkle with salt.
  7. Put the fish carcasses on the vegetables.
  8. Cut each apple into 8 pieces. Cut off the seedbox.
  9. Arrange the apples in the mold, filling the space between the fish. Sprinkle with the remaining dried herbs.
  10. Cover the fish with apples, carrots, and onions with a loose piece of foil.
  11. Baked hake with apples and carrots in the oven at 200 degrees for 35-40 minutes. At the end, you can remove the foil and let the fish brown.
  12. Put the finished fish on a plate, spread the garnish around – baked apples and carrots with onions.
  13. Serve hot.
  14. Sweet apples surprisingly perfectly fit into the already established collective of baked fish with carrots and onions.
