Ingredients
- 12 fish fillet (s) (herring fillets)
- 250 ml red wine
- 250 ml vinegar (wine vinegar)
- 100 g suar
- 1 teaspoon mustard seeds, or
- 3 carnation (s)
- 10 grains allspice
- 3 onion (s)
- Bay leaf

- Prepare the matjes fillets ready to cook and cut the onions into rings.
- Then bring everything together, except the matjes, to the boil, season to taste, (we always need a little more sugar, maybe a little more water, we like more lovely and not so sour !!!) let cool and pour over the matjes. Bay leaf etc. can also be boiled up.
- Place in a cool and dark place for at least 2 days and at most 5 days.
- With wholemeal bread.
