Hummus (Pea Dish with Sesame Flour and Pepper)

Ingredients

  • Chickpeas (chickpeas) dry – 1.5 cups
  • Sesame (or sesame flour) – 0.5 cups
  • Olive oil – 0.5 cups
  • Salt – 1.5 teaspoon
  • Red pepper – 1.5 teaspoon
  • Garlic – 4 cloves
  • Lemon (juice) – 2-4 tbsp (to taste)

Directions

  1. Prepare foods for a hummus recipe.
  2. Prepare the peas for hummus – cover with water and leave overnight.
  3. The next day, change the water, salt the peas (1 teaspoon) and cook until they become soft (2-3 hours with a low boil).
  4. Drain the liquid. Make the pea puree.
  5. Peel and crush the garlic.
  6. If using kurjut grains, grind them with a blender, coffee grinder or spice grinder.
  7. Mix the resulting sesame flour with crushed garlic, salt and pepper. Add to the mashed peas and mix thoroughly.
  8. Then add a little lemon juice and pour in a thin stream of olive oil. Mix well.
  9. Add some water (100-150 ml). Whisk thoroughly. Hummus with sesame flour is ready.
  10. Place hummus on a platter. Serve with toasted bread or bread cakes.
