Hummus From Yellow Peas

In the countries of the Middle East, hummus is made from chickpeas, adding various spices, lemon juice and olive oil. But this dish can be prepared not only from chickpeas. We sometimes replace it with more affordable yellow peas. It turns out very well – just as tasty, original and quite spicy.

Ingredients

  • Dry yellow peas – 300 g
  • Carrots – 120 g (1 medium or 2 small)
  • White onion – 1 pc.
  • Red onion (for serving) – 1 pc.
  • Lemon – 1 pc. (120 g)
  • Fresh parsley (for serving) – 4 sprigs
  • Olive oil – 100 g
  • Pepper mixture – 1 teaspoon
  • Ground paprika – 0.5 teaspoon + for serving
  • Turmeric – 0.3 teaspoon
  • Coriander – 0.5 teaspoon
  • Salt – 0.5 teaspoon (to taste)

Directions

  1. Preparing the ingredients for making pea hummus.
  2. If the peas are split, you can do without pre-soaking – just rinse them thoroughly under running water. Or we soak the peas for 5-6 hours in cold water.
  3. Peel white onions and carrots.
  4. Pour peas with 700 ml of water in a saucepan (preferably with a thick bottom). Put the peeled onion (whole or cut in half) and carrots there. Cook the peas for about an hour, until soft. Peas need to be stirred occasionally so that they do not stick to the bottom and burn. You can cook the peas in a different way: pour a lot of water (1-1.2 l), and when it becomes soft, drain the remaining water. With this method, the peas will definitely not burn, but the taste will not be so rich.
  5. My dry split peas were cooked in 50 minutes (without presoaking). We take out the onions and carrots, we will no longer need them.
  6. Squeeze juice from lemon – we need 6-7 tbsp.
  7. Add 80 g of olive oil to the lemon juice (the rest will water the finished hummus), as well as spices: paprika, turmeric, coriander and a mixture of peppers.
  8. Mix everything well.
  9. Then add this mixture to the peas.
  10. Using a blender, turn everything into a homogeneous mashed potatoes. Salt to taste.
  11. Peel and cut the red onion into thin half rings. Finely chop the parsley leaves.
  12. Put some red onion on the finished pea hummus, sprinkle with parsley and paprika. Pour olive oil on top.
