Ingredients

  • 600 g turkey breast fillet (s)
  • 200 g bamboo shoot (s) from the jar
  • 300 ml poultry stock from the glass
  • 200 ml coconut milk
  • 50 g iner root
  • 1 stick (s) celery
  • 2 small carrots
  • 1 small bell pepper
  • 3 tablespoon, leveled curry powder
  • 50 g shiitake mushroom (s) from the lass
  • 3 teaspoon soy sauce, possibly gluten-free
  • some Himalayan salt or sea salt
  • some chilli flakes
  • 3 teaspoons coconut oil or other
  • 3 leaves room garlic, alternatively 1 clove garlic

Instructions

  1. Bring the chicken stock, soy sauce and coconut milk to a boil in a saucepan.
  2. In the meantime, cut the turkey breast fillet into cubes and add to the boiling broth. Let it steep for about 10 minutes over a low heat.
  3. During the steeping time, dice the peeled ginger and the stalk of celery, cut the carrots into thin slices and the peppers into fine strips. Drain the bamboo and mushrooms well and cut the mushrooms into small pieces.
  4. Sweat the celery, ginger, possibly garlic and curry powder with coconut oil in a pan. Then add the carrots, mushrooms, bamboo shoots and peppers. Sauté briefly and then add to the saucepan with the meat and the broth. Chop the garlic and add it. Season to taste with chilli and salt. Bring to the boil briefly and finish cooking for approx. 5 - 10 minutes (depending on the size of the meat) over a low heat.
  5. If required, low-carb noodles can be served with it, e.g. Shirataki noodles, non-low-carb e.g. rice. If the sauce is too runny for you, it can bind with a little starch.
