Meat Bread with Cauliflower, Green Beans, Tomatoes and Peppers

Recipe for a delicious and satisfying meal bread stuffed with cauliflower, green beans, tomatoes, carrots, and bell peppers. The juicy vegetable filling is in perfect harmony with meat. Fry vegetables in a pan, put them in a mold between two layers of minced meat, and bake in the oven. The traditional cheese crust on top completes the culinary picture with a bright and salty touch. Well worth cooking!

Servings: 5

Ingredients

For minced meat:

  • Minced meat – 1 kg
  • Egg yolks – 2 pcs.
  • Starch – 1 tbsp
  • Salt to taste
  • Ground black pepper – to taste

For filling:

  • Cauliflower (frozen or fresh) – 100 g
  • Green beans (frozen or fresh) – 50 g
  • Onions – 100 g (1 pc.)
  • Tomatoes – 100 g (1 pc.)
  • Bulgarian pepper – 100 g (1 pc.)
  • Carrots – 130 g (1 pc.)
  • Butter – 20 g
  • Dried greens – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Additionally:

  • Hard cheese – to taste
  • Butter (optional) – to prepare the mold
  • Bread crumbs (optional) – to taste

Directions

  1. Wash the meat well, pat dry with paper towels and pass through a meat grinder. You can cut the meat into very small cubes.
  2. Add egg yolks, starch, salt, and ground pepper to the minced meat to taste. Mix well. Preheat oven to 180 degrees.
  3. Peel the onions and carrots, wash, dry, and cut into small cubes.
  4. Rinse and dry the bell peppers and tomatoes. Cut them into cubes.
  5. Add onions, carrots, bell peppers, tomato, green beans, and cauliflower florets to the skillet. Pour in about 30 ml of water and simmer the vegetables for 5-8 minutes over high heat until all the liquid has evaporated.
  6. Add a piece of butter, dried herbs (I have dill), salt, and ground pepper to the vegetables. Stir.
    Simmer for another 3-5 minutes to soften the vegetables.
  7. Turn on the oven to preheat to 180 degrees. For making meat bread, I used a 10×30 cm pan. It can be greased with butter and sprinkled with bread crumbs. I just cover it with parchment paper. Place a large half of the minced meat (about 2/3) into the mold and make the sides. This can be done with your hands or with a spoon. If the minced meat is very dense, moisten a spoon or hands with water.
  8. Place the vegetable filling in the center of the minced meat. Smooth with a spoon.
  9. Top the filling with the remaining minced meat and flatten with a spoon.
    Send the form to the oven and bake the meatloaf at 180 degrees for 40-50 minutes. Roasting time depends on the power of your oven. Optionally, you can turn on the grill and brown the meatloaf. I do not do this.
  10. Remove the cauliflower, green beans, tomato, and peppercorn loaf from the oven.
  11. Grate the cheese on a coarse grater. Sprinkle the grated hard cheese over the meatloaf and send it back to the oven. Bake at the same temperature for another 5-8 minutes, until the cheese melts.
  12. Remove the finished meatloaf from the oven and cool slightly.
