Oatmeal Cookies with Carrots

It turns out two in one – carrot muffin or carrot cake in oatmeal cookies.
Ingredients
- Softened butter – 100 g
- Brown sugar – 3/4 cup
- Eggs – 2 pcs.
- Vanilla sugar – 1 tbsp
- Flour – 1 glass
- Soda – 1/3 teaspoon.
- Oatmeal flakes – 1.5 cups
- Large carrots – 1 pc.
- Ground cinnamon – 1 teaspoon
- Ground ginger – 1 teaspoon
- Ground nutmeg – 1/3 teaspoon
- Salt – 1/2 teaspoon.
- Powdered sugar – 1/2 cup
- Pineapple juice – 2-3 tbsp
Instructions
- Combine butter with vanilla and brown sugar.
- Mix. Add eggs. Beat with a mixer.
- Add salt, soda, cinnamon, ginger, nutmeg.
- Add sifted flour. To stir thoroughly. Add oatmeal. Mix it.
- Grate the carrots on a coarse grater. Add carrots to the dough. Mix.
- Preheat oven to 190 degrees. Line a baking sheet with baking paper. Form a cookie with a tablespoon. Bake oatmeal cookies with carrots for 25 minutes. Allow cooling.
- Mix the powdered sugar with pineapple juice.
- Pour the resulting icing over the cookies. Enjoy your meal!
