Ingredients
For the dumplings:
- 500 g quark (low-fat quark)
- 3 egg (s)
- 100 g flour
- 130 g semolina
- 6 tablespoon sugar
- 1 teaspoon lemon (s), the zest, grated
For the sauce:
- 450 g berries, mixed, fresh or frozen
- Sugar or sweetener, to taste
For decoration:
- Peppermint or lemon balm leaves

- Mix the low-fat quark with the eggs until creamy. Stir in the flour and semolina. Season with grated lemon zest and sugar. Let the mass swell for 30 minutes.
- In the meantime, for the berry sauce, heat the mixed berries (fresh or frozen) in a saucepan, coarsely puree and season with a little sugar or sweetener.
- With two tablespoons (as a sweet main course) or 2 teaspoons (as dessert), cut off small dumplings and let them steep in boiling (no longer bubbly boiling) water until the dumplings float on the surface.
- Spread the berry sauce on 4 dessert plates as a mirror. Arrange the drained dumplings on the berry sauce and serve garnished with lemon balm or mint leaves.
- Tip:
- If you want to prepare the quark dumplings as a dessert, you only prepare half of it.
