Ingredients

  • 350 g couscous
  • 525 ml boiling water
  • 4 carrot (s)
  • 3 beetroot, cooked
  • 1 cucumber (s)
  • 250 g cheese (halloumi)
  • some flour
  • some chili sauce, sweetie
  • some sesame
  • 4 tablespoon olive oil
  • 3 tablespoon vinegar
  • 1 teaspoon sugar
  • 1 teaspoon oregano, dried
  • salt and pepper
  • olive oil

Instructions

  1. Put the couscous in a bowl with boiling water and a good pinch of salt, cover with a plate and leave to soak for 10 minutes. Then arrange the swollen couscous on a platter.
  2. Heat a coated pan strongly. Cut the halloumi into bite-sized pieces and dab with kitchen paper, then roll in a little flour. Put a dash of olive oil in the hot pan and fry the halloumi pieces in it over medium to high heat until brown. Turn in between. When the halloumi is nice and brown on all sides, add about 1 tablespoon of sweet chili sauce and about 1 tablespoon of sesame seeds to the pan with the halloumi, toss briefly and let it caramelize. Do not take your eyes off the pan, because both the sweet chilli sauce and the sesame seeds burn quickly.
  3. Peel the carrots and grate roughly with a kitchen grater. Wash the cucumber thoroughly and grate it roughly as well. Finally, grate the beetroot (optionally with gloved hands).
  4. Arrange the three types of vegetables individually decoratively on the couscous, creating a rainbow look.
  5. Make a salad dressing from olive oil, vinegar, salt, pepper, sugar and oregano and pour over the couscous-vegetable mix.
  6. Place the halloumi on the serving plate with the couscous and serve. Stir the couscous at the table so that the couscous and vegetables are evenly distributed.
  7. The couscous salad without halloumi is great to take with you to work / school / university. It tastes particularly good if you add 1 tablespoon roasted sesame seeds to it. Of course, this is not necessary if you eat it with halloumi, because it is already rolled in sesame.
