Restaurants of Budapest Haute and Author’s Cuisine

by Editorial Staff

Nobody knows exactly how many restaurants there are in the city. And obviously, no one can boast that he bypassed them all. When choosing a restaurant in Budapest, you need to listen to your inner voice (and to my recommendations). It will not be fast anywhere, as, indeed, in the rest of Europe, but there are many places where it will be delicious.

Haute cuisine – Michelin stars

In 1900, when André Michelin published the first restaurant guide to France, the tradition began to award Michelin stars to some of the world’s finest restaurants. Not necessarily (although often) the most luxurious and expensive, but certainly with high-quality cuisine. There are six Michelin stars in Budapest. Here they are.

COSTES

Ráday utca 4, www.costes.hu
Main menu: 17 – 42 €

The restaurant’s reputation is confirmed by a Michelin star, the first in Budapest. Its cuisine can be imagined from a tasting menu that includes duck liver in Tokaj Asu with beans, a special recipe for cooked salmon, and finally its own version of Poire Belle Hélène (pear with ice cream, cream, and chocolate). Practically, deflop avek le cruton, only even cooler. The restaurant is located at the very beginning of the Radai restaurant street.

ONYX

Vörösmarty tér 7-8, www.onyxrestaurant.hu
Main menu: 10,500 – 11,500 HUF

Another Michelin-starred restaurant is located in the very center, on Vörösmarty Square, where the very first metro line in Europe begins. He specializes in Hungarian cuisine, but his style is far from folklore and ethnicity. Gourmets are waiting here, ready to appreciate the dish called Foie Gras Cake with Caramel Parfait and Butter Buns. The interiors, style, and spirit are such that they make us speak in a high style: sophistication, elegance, charm – this is about Onyx.

BORKONYHA

Sas utca 3, www.borkonyha.hu
Main menu: 2 950 – 7 950 HUF

The third Michelin star in Budapest. The name in translation from Hungarian means “Wine cuisine”, and there is as much wine as you like, first of all, local. The character of the restaurant is quite democratic; a tailcoat is not required. But the food will be served exactly as it should be in haute cuisine establishments – you can also admire them before eating. The location is also quite good – on one of the small streets near the Basilica of St. Stephen.

Of the three restaurants with stars in Wine Kitchen, the lowest price list. There are many more expensive restaurants in Budapest.

STAND

Székely Mihály utca 2, www.standrestaurant.hu
Chef menü: 34 500 HUF

The restaurant is strategically located midway between the nightlife district and the decent Andrássy Avenue, where the Opera is. A benevolent well-fed audience comes out and thinks: well, what, for a cup of coffee in the Parisian cafe, where the paintings on the ceiling are steeper than the opera ones, or to jerk off to the Simple, to walk like that, pushing the company of drunken Englishmen along the way? The main thing on the menu is Hungarian culinary masterpieces: duck liver, smoked carp, Tokay …

BABEL

Piarista köz 2, www.babel-budapest.hu
Dinner: 29.900 HUF

The cuisine is European, Hungarian, and, for connoisseurs, Transylvanian. The interior is elegant without the chic, noble without asceticism. The restaurant is located in the center, next to Vaci street, but so that the walking crowd may well not notice it. It has been said: for experts.

Author’s cuisine

Restaurants of a high level, but not yet Michelin-starred, with their own face, concept, and philosophy, not similar to others, understanding culinary as art – this is what is called “author’s cuisine”.

BOCK BISZTRÓ

Erzsébet körút 43–49, www.bockbisztropest.hu
Main menu: 3 700 – 14 100 HUF

Winemaker Josef Bock and chef Lajos Biro have teamed up to create a restaurant at the Carinthia Hotel with an impressive wine list and menu, where local recipes and culinary techniques are effortlessly combined with foreign ones: chicken paprikash competes here with confit duck leg, foie gras served as sushi, the tapas section along with stuffed squid offers cracklings from Mangalica fat. Tasty, beautiful, modern, and at the same time, traditional in many ways; if the “new Hungarian cuisine” exists at all, then this is it, and there are plenty of hunters for it: a table for dinner at Bock Bisztró must be booked several days in advance.

BORSSÓ

Királyi Pál utca 14, www.borsso.hu
Main menu: 4 200 – 5 550 HUF

The restaurant combines different culinary traditions, namely French and Hungarian. Chef Norbert Kovacs is creative; his dishes are able to impress not only with their taste but also with their appearance. Here they not only know a lot about duck legs, rabbit liver, and pear pies, but also pay tribute to paprika, sausages, and strudel. Capturing the culinary aesthetics of both countries in the served dish is great gourmet entertainment. The place is quite suitable: near Calvin Square, away from the tourist bustle. In the summer you can sit outside, in the winter it is nice to climb onto the mezzanine and watch the life below from there.
