Shortbread Cookies with Apples and Nuts

Shortbread cookies with apples and nuts according to this recipe are very tasty! Juicy and aromatic filling of apples and nuts perfectly harmonizes with the most delicate crumbly dough that simply melts in your mouth. Be sure to try cooking.

Ingredients

For the dough:

  • Wheat flour – 280 g + for working with dough
  • Egg – 1 pc.
  • Sugar – 70 g
  • Sour cream – 70 g
  • Butter – 100 g
  • Vegetable oil – 40 ml
  • Corn starch – 40 g
  • Baking dough – 1 teaspoon
  • Vanilla sugar – 1 teaspoon
  • Salt – 1 pinch

For filling:

  • Apples – 300-400 g
  • Walnuts – 70 g
  • Sugar – 30 g
  • Ground cinnamon – ½ teaspoon

For sprinkling (optional):

  • Powdered sugar – to taste

Directions

  1. We prepare products.
    Remove the butter, egg and sour cream from the refrigerator about an hour before cooking so that they are at the same temperature.
    We also need parchment paper.
  2. Cooking the dough.
    Combine butter and vegetable oil, sugar, egg, sour cream, vanilla sugar and salt in a bowl.
  3. Beat for 1-2 minutes.
  4. Sift flour, starch and baking powder into another bowl. We mix.
  5. Add half of the flour mixture to the liquid ingredients and beat until smooth.
  6. Then add the remaining flour and knead the dough by hand.
    The dough is very soft and non-sticky to your hands.
  7. We wrap the dough with cling film and send it to the refrigerator while we prepare the filling.
  8. For the filling, use a blender to grind the nuts.
  9. Peel the apples and rub them on a coarse grater.
  10. Put the apples in a pan, sprinkle with sugar and stir. Simmer for 5-6 minutes.
  11. Then add the nuts and cinnamon. Simmer for another 1 minute and turn off the heating. Let the apple-nut filling cool completely.
  12. We turn on the oven to heat up to 170 degrees.
    We take the dough out of the refrigerator and put it on a table dusted with flour. Roll out the dough into a rectangle or square 5-7 mm thick.
  13. We cut the dough layer into squares with a side of 6-7 cm.
  14. Put 1 teaspoon of apple and nut filling in the center of each square.
  15. We pinch two opposite corners of the dough.
  16. We transfer the cookie cutters to a baking sheet covered with parchment paper. We send to the oven for 15-20 minutes.
  17. Let the shortbread cookies with apples and nuts cool completely.
  18. Sprinkle the cooled cookies with icing sugar.
