Shrimp Fried with Corn

Shrimps are stir-fried with corn, shallots and hot peppers in a wok.

Servings: 4

Ingredients

  • Medium shrimp (peeled) – 650 g
  • Corn – 1.5 cups
  • Shallots (chopped) – 0.5 cups
  • Lime juice – 1.5 tbsp
  • Fish sauce – 1 tbsp
  • Sugar – 0.5 teaspoon.
  • Vegetable oil – 2 tbsp
  • Garlic (chopped) – 1 tbsp
  • Jalapeno pepper (chopped) – 1 tbsp
  • Fresh cilantro (chopped) – 1/3 cup

Directions

  1. In a bowl, combine lime juice, fish sauce and sugar. Set aside.
  2. Heat a wok or other large frying pan over high heat, grease with vegetable oil. Place the shallots, garlic and pepper in a preheated pan and cook, stirring occasionally, for about 30 seconds.
  3. Put the shrimps in a frying pan, fry for about 3 minutes, until the latter are tender. Then add corn kernels, cook for about 1 minute. Add a mixture of lime, fish sauce and sugar to the pan and stir. Sprinkle with cilantro and serve immediately.
