Beet-Curd Muffin

The cake is made on the basis of curd cheese. I just experimented – I added beets and did not regret it. It will be very tasty on the second day.
Ingredients
- Margarine – 50 g margarine
- Pureed cottage cheese – 300 g
- Sugar – 250 g
- Flour – 500 g
- Eggs – 4 pcs.
- Dark raisins – 1.2 cups
- Lemon – 1 pc.
- Baking powder – 1 sachet
- Raw beets grated with small shavings – 1 cup
Directions
- Using a mixer, beat soft margarine or butter with sugar until froth, adding eggs one by one. Stir in grated raw beets, grated cottage cheese, flour with baking powder, raisins, lemon juice and lemon zest.
- You can add a bag of vanilla sugar. Stir well and place in a greased dish. Bake for about 50 minutes at 180 degrees. For 20 minutes I just bake on a baking sheet and then put a tray of water down.
- Grease the finished cake with hot jam or jam and sprinkle with almond shavings or other colorful shavings
