Dorado Fish, Baked in Salt, with Vegetable Garnish

Today we will cook fish in the oven, with a steamed vegetable garnish, but it will not be a simple fish. Today’s recipe is perfect for those foodies who love fish but hate to struggle with scales. We’ll bake dorado in salt.

Ingredients

  • Dorado – 2 pcs.
  • Egg – 2 pcs.
  • Sea salt (large) – 500 g
  • Fresh thyme – 2-4 branches
  • For garnish:
  • Broccoli – 1 pc.
  • Zucchini – 1 pc.
  • Olive oil – 2 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

How to cook dorado fish baked in salt:

Directions

  1. We take the eggs, separate the whites from the yolks.
  2. We add sea salt to the proteins, always large.
  3. Stir. You should get a sticky mass, in consistency – like a thick dough for pancakes.
  4. We clean the fish – cut off the fins, tail, take out the insides.
  5. Attention! We do not touch the scales, it should remain.
  6. Put some olive oil into the gilthead’s belly.
  7. Add one or two sprigs of thyme. Preheat the oven to 180 degrees.
  8. We generously coat the fish with a salt mixture on one side.
  9. Transfer to a baking sheet put on the “salt” side.
  10. We coat on the second side, do not forget the back and head.
  11. That’s it, we transfer the dorado in salt to the oven.
  12. And we ourselves will do the vegetable side dish. We take broccoli, sort by inflorescences.
  13. Cut the courgettes lengthwise, in large slices. Vegetables need to be prepared beautifully – they are very noticeable in this dish.
  14. Do you know what I recommend doing? After cutting the vegetables, hold them in water for half an hour. Let them regain the moisture they lost while getting to your table. And believe me, in gratitude for this moisture, you will get a completely different taste than immediately putting vegetables in the oven.
  15. Everything. We spread the vegetables on a baking sheet, put in the oven with the “Steam” mode. Temperature – 96 degrees, time – 18 minutes.
  16. We check the fish. The salt carapace turned pink. We knock on it – hard, you can get it.
  17. The fish baked in salt is ready. Remove the salt with the skin very carefully. The fish has absorbed all the salt it needs, no more and no less – this is its property.
  18. Ready and vegetables. A little salt, a couple of drops of olive oil – you can’t imagine more dietary.
  19. We put our whole fish on a plate. We put a vegetable side dish under the barrel. You can add a slice of lemon. That’s it, this dish doesn’t need anything else. Dorado baked in salt and steamed vegetable garnish is a gourmet and nutritionist’s dream! And there is no need to fight with scales.
