  • Salmon or halibut, skinless fillet 2.5 cm thick – 450 g
  • Fresh chopped vegetables (carrots, green beans, zucchini, bell peppers) – 4 cups
  • Orange (cut into thin slices) – 1 pc.
  • Green onions (chopped) – 0.5 cups
  • Fresh oregano (chopped) – 1 tbsp
  • Small orange zest – 2 teaspoon.
  • Salt – 0.25 teaspoon
  • Ground black pepper – 0.25 teaspoon.
  • Garlic (cut in half) – 4 cloves
  • Olive oil – 4 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Fresh oregano – 4 sprigs (optional)

  1. Turn on the oven to preheat to 180 degrees. Wash fillets and dry with a paper towel. Cut the fish into 4 slices and set aside. Cut 4 squares from parchment with sides 35 cm, fold in half, unfold. Set aside.
  2. Put vegetables, green onions, oregano, orange zest, garlic in a large bowl, add 1/4 teaspoon of salt and pepper, mix.
  3. Divide the vegetable mass into 4 equal parts and place them in half on parchment sheets.
  4. Place one piece of fish on each vegetable pillow. Drizzle each piece of fish with 1 teaspoon of oil, sprinkle with a little salt and pepper.
  5. Place a couple of orange slices on each piece of fish.
  6. Cover the fish and vegetables with the second half of the parchment, fold the edges as shown in the picture.
  7. Keep the paper tightly closed on all sides.
  8. Put the bags of fish and vegetables on a baking sheet, place in a preheated oven for 25 minutes, then make X-shaped cuts in the bags to check the fish for readiness. If the fish baked with vegetables is not ready, then you need to place the bags in the oven for another 10-15 minutes.
