Baked Meat with Zucchini and Eggplant (in Parchment)

Meat baked with vegetables and cheese is always delicious. And if you cook such a dish in parchment, it will also be useful! Thanks to the parchment envelope, products are cooked in their own juice, baked quickly, and do not dry out. The meat is very tender and aromatic, and the vegetables are juicy. A great option for a light dinner without hassle. Try it!

Ingredients

  • Pork (ham) – 450 g
  • Eggplant – 200 g
  • Zucchini – 400 g
  • Tomatoes – 300 g
  • Hard cheese – 70 g
  • Fresh parsley – 20 g
  • Hops-surely (or a mixture of dried herbs) – 1 teaspoon
  • Vegetable oil – 1 tbsp
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare foods from the list. Cut 4 sheets of parchment paper about 30x40cm.
  2. Cut the pork into small strips.
  3. Add hop-surely (or a mixture of dried herbs) to the meat, a little salt, ground black pepper, and vegetable oil. Mix well and let sit for 15 minutes.
  4. In the meantime, prepare the vegetables. Cut eggplant, zucchini, and tomatoes into slices 4-5 mm thick. Grate the cheese on a fine grater. Finely chop the herbs and separate a little to garnish the dish.
  5. Turn on the oven to heat up to 200 degrees. Place a few tomato slices on a piece of parchment. Season with salt and pepper and sprinkle with a pinch of herbs.
  6. Top with a layer of sliced ​​zucchini.
  7. Place 1/4 of the meat on top of the zucchini.
  8. Add a few circles of eggplant. Season with salt and pepper and sprinkle with a pinch of herbs.
  9. Add another layer of zucchini. Sprinkle with 1/4 of the grated cheese.
  10. Wrap the meat and vegetables in parchment and twist the ends of the parchment to make an airtight envelope.
  11. Repeat the process with the remaining vegetables, meat, and cheese, wrapping it in parchment in the same way. Cover a baking sheet with parchment and put envelopes with meat and vegetables there.
  12. Place the meat and vegetables in the parchment in an oven preheated to 200 degrees and bake for 30-35 minutes (focus on your oven). At the end of baking, you can open the parchment slightly and let the cheese brown.

Serve the meat and vegetables directly on the parchment. When serving, sprinkle each serving with herbs.
