- 500 g spelled flour (whole rain)
- 1 pack dry yeast
- 100 ml water, lukewarm
- 1 teaspoon sugar
- 250 ml buttermilk, lukewarm
- 0.5 teaspoon ½ sea salt, coarse
- 0.5 teaspoon ½ pepper

- Put the flour in a bowl, make a well, add sugar, water and yeast and mix with a little flour from the edge. Cover and let rise in a warm place for 15 minutes.
- Then knead the dough well with the remaining ingredients and cover and let rise for 60 minutes. Then knead again well, act for a long time and place the dough in a greased loaf pan. Let rise for 40 minutes.
- Now cut lengthways, brush with water and bake for 15 minutes at 210 ° C (top and bottom heat) and another 35 minutes at 180 ° C. It is best to put a bowl of water in the oven and brush the bread with water every 10 minutes. Makes a nice crust!
