Pumpkin Caramel

American cuisine is very fond of using pumpkin in sweet pastries and desserts. Moreover, its mild taste is complemented by bright spices. We always get something unusual for us, like in this recipe.

Servings: 10

Ingredients

  • White sugar – 300 Grams
  • Water – 60 Milliliters
  • Light corn syrup – 60 Milliliters
  • Fat cream – 120 Milliliters
  • Pumpkin puree – 150 Grams
  • Butter – 4 Tbsp. spoons
  • Vanilla extract – 0.5 Teaspoons
  • Salt – 0.25 Teaspoons
  • Ground cinnamon – 0.25 Teaspoons
  • Ground allspice – 1 Pinch
  • Ground nutmeg – 1 Pinch
  • Ground Ginger – 1 Pinch

Directions

  1. In a saucepan, combine syrup, sugar and water. Simmer the mixture for 10 minutes over low heat, stirring constantly.
  2. Then mix all the ingredients from the composition separately.
  3. Next, add the pumpkin mass to the caramel mixture. Cook for another 15 minutes, stirring occasionally.
  4. Then pour the sweet consistency onto a flat rectangular dish. Leave it in the refrigerator until it solidifies.Serve the caramel by cutting it into small squares. You can also add pepper and sea salt.
