  • 1 ½ kg chicken (roast chicken), excluded
  • 5 tablespoon vinegar (red wine vinegar)
  • 4 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon sesame seeds if necessary
  • salt
  • pepper

Instructions

  1. Preheat the oven to 180 ° C fan oven.
  2. Wash and dry the chicken outside and inside. Then season with salt and pepper and add 2 tablespoons of red wine vinegar inside.
  3. Then put the chicken in the hot oven for 1 hour 10 minutes - the easiest way to do this is on a chicken holder. If you don`t have one, you first put the chicken breast down in a roaster and turn it after about 1 hour, so the breast is nice and juicy and still has a crispy skin.
  4. In the meantime, mix the glaze from the rest of the ingredients. Brush the chicken with half of the glaze and put it in the oven for another 10 minutes. Then put the rest of the glaze on the chicken and put it in the oven for another 10 minutes until it is golden yellow and shiny. Let rest for another 5 minutes before cutting.
  5. Tip: If you use a chicken holder, I put it in a roaster in which I put about 1/2 l chicken stock. If necessary, top up again and again before all the liquid has evaporated. In the end you also have a nice sauce.
