Sandwiches with Bell Pepper and Smoked Sausage

An interesting breakfast recipe for crunchy lovers – we spread sausage and fresh bell pepper marinated in a mixture of vegetable oil, lemon juice, and spices on dried bread slices. Thanks to sweet pepper, sandwiches are both bright and healthy.

Ingredients

  • Rye bread – 100 g (3 slices)
  • Bulgarian pepper (preferably different colors) – 120 g
  • Smoked sausage – 40 g
  • Vegetable oil – 1 tbsp
  • Lemon juice (or apple cider vinegar) – 1.5 teaspoon
  • Ground smoked paprika – 0.25 teaspoon
  • Freshly ground black pepper – to taste
  • Salt – 1 pinch

Directions

  1. Prepare the required ingredients.
    Squeeze 1 teaspoon of juice from a slice of lemon or replace it with apple cider vinegar.
    I recommend using bell peppers in different colors – so the sandwiches will look brighter and more appetizing. In the absence of, you can use only one color sweet pepper. The main condition is that the fruits must be fleshy and juicy.
    Both rye and wheat bread can be used.
  2. In a deep bowl combine vegetable oil, lemon juice, and smoked paprika. Add salt, focusing on the taste of the sausage, and black freshly ground pepper.
    Stir until smooth.
  3. Peel, wash, and cut sweet peppers into 2-3 cm strips.
  4. Place the bell peppers in the marinade bowl. Stir and leave for 10 minutes.
  5. Cut the smoked sausage into strips of the same size as the pepper.
  6. Add the sausage to the pepper.
  7. Mix.
  8. Dry the slices of bread in a toaster (choose the mode, focusing on the characteristics of your technique) or in a dry preheated frying pan for 1 minute on each side.
    Rye bread should not be dried for too long, otherwise, it will be very tough. If you have wheat bread, focus on a light brown crust. The inside of the bread should remain soft.
  9. Put on slices of bread for 2-2.5 tablespoon. tablespoons of a mixture of sweet pepper and sausage.
  10. Sandwiches with bell pepper and smoked sausage are ready. If desired, sprinkle with freshly ground pepper when serving.
