Sweet Rice Cake

Sweet rice cake is a delicious dessert that requires the simplest ingredients. It turns out a pie with a delicate taste, and it is cooked without flour, which is also important. Here’s how to cook it.

Ingredients
- Rice – 200 Grams
- Sugar – 200 Grams
- Milk – 1 Liter
- Eggs – 4 Pieces
- Almond groats – 100 Grams
- Lemon – 1 Piece (cut the zest into strips)
- Vanilla pod – 1 Piece
- Ground cinnamon – 2 Teaspoons
- Breadcrumbs – To taste (for baking sheet)
- Powdered sugar – To taste (for decoration)
Directions
- Bring the milk to a boil by adding the lemon zest and the vanilla pod, cut in half lengthwise. Add rice and cook for 15 minutes, until all the milk is absorbed.
- Remove the lemon rind and vanilla pod and transfer the rice to a bowl and let cool to room temperature.
- Put sugar, eggs in a separate bowl and beat with a mixer until fluffy.
- Add cooked rice.
- Add ground almonds
- Add cinnamon and stir everything.
- Pour the resulting mixture into a baking dish or deep baking sheet, greased with butter and sprinkled with bread crumbs.
- Bake the rice cake for 50 minutes in an oven preheated to 180 degrees until dark golden brown.
- Cut the finished pie into squares or diamonds and sprinkle with powdered sugar.
