Ingredients

  • 1 pack wafers - sheets (5 slices)
  • 40 grams flour
  • 50 grams sugar
  • 200 ml milk
  • 1 point vanilla sugar
  • 1 egg yolk (or whole egg)

For the cream:

  • 250 grams sugar
  • 15 g coffee, round and a little roasted
  • 250 g mararine or butter
  • possibly couverture

Instructions

  1. Mix all ingredients well except for waffles and bring to the boil, stirring constantly. Let cool down.
  2. In the meantime, mix 250 g margarine, 250 g sugar and 15 g ground and slightly roasted coffee well. Mix everything together and coat the waffles very thinly (there are 5 in total). Now put the last base on top of the other and weigh the cake down with a flat object. I always put a tray on top and a pair of tetra packs of juice and leave it that way overnight.
  3. Cut into cubes the next day.
  4. You can leave it like that or sprinkle it with couverture.
  5. Variations:
  6. If you leave out coffee and add the following you get:
  7. - Chocolate / cocoa filling: Coffee off, instead 30 g cocoa or
  8. - Lemon filling: Instead of coffee, zest and juice of half a lemon
  9. -Orange filling: instead of coffee zest and juice half an orange
  10. This cake is very easy to make and can last a long time.
