  • 1 shot port wine
  • 100 ml red wine
  • 50 ml cream

Instructions

  1. Massage the ostrich steaks with olive oil, sprinkle with thyme and pepper. The steaks should be about 3 cm high and weigh between 150 and 200 g. Marinate at room temperature for approx. 30 minutes.
  2. Heat the iron pan and fry the steaks without any additional oil over a medium heat for approx. 4 minutes in total. They should be nicely tanned.
  3. Preheat a casserole dish at 140 ° in the oven while searing. After searing, the steaks are removed from the pan and placed in the baking dish that has been lightly coated with olive oil. Cook at 140 ° for 10 minutes, then reduce the temperature to 100 ° and cook for another 15 minutes. Then the steaks should be cooked medium. Those who prefer to cook them a little less cooked them for just 7 minutes at 140 ° and then set it to 100 °. Salt, pepper.
  4. You can make a sauce with red wine and port wine from the frying residue in the iron pan. Let it boil down and refine with a little cream. Season to taste with salt and pepper.
