Pork Burrito Carnitas

Carnitas is a Mexican-style pork stew commonly used for burrito fillings. Pork shoulder is most often used in cooking. The prepared meat is chopped with forks, and the pieces are fried in a pan until golden brown. Wrap juicy meat in warm tortillas and enjoy.

Servings: 4-6

Ingredients

  • 0.9 kg. pork shoulder without bone (or 1.1 kg. – with bone)
  • 2 teaspoon. dried oregano
  • 1 teaspoon ground cumin
  • 1 tablespoon. olive oil
  • 1 onion, coarsely chopped
  • 4 garlic cloves, chopped
  • 1 jalapeno, seeded and septum, chopped
  • 1 orange, halved
  • 3 tablespoon. vegetable oil
  • 4-6 tortillas

Directions

  1. Wash and dry the pork. Season generously with salt and pepper. Combine oregano and cumin with olive oil and grate all the pork.
  2. Place the meat in the slow cooker and top with the onion, garlic, and jalapenos. You use orange juice and insert both halves into a saucepan. Cover and cook on low heat for 8-10 hours or high heat for 4 hours.
  3. When the meat is tender, remove it from the slow cooker and allow it to cool slightly before chopping it with forks.
  4. Heat vegetable oil in a large skillet over high heat. Put the meat in the oil, using and fry until a crust forms on the bottom. Serve wrapped in tortillas.
