Zucchini, Carrot and Oatmeal Casserole

A simple, tasty, and quite budget vegetable dish – a casserole made from zucchini, carrots, and oatmeal. This casserole is cooked without flour and turns out to be surprisingly tender, juicy, and equally good both warm and cold. Excellent breakfast, snack, or addition to meat or fish dishes. Definitely worth taking note of!

Ingredients

  • Zucchini – 200 g
  • Carrots – 150 g
  • Onions – 100 g
  • Oatmeal flakes – 2 tbsp
  • Eggs – 4 pcs.
  • Hard cheese – 40 g
  • Fresh parsley – 10 g (2-3 sprigs)
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for lubrication) – 1 tbsp

Directions

  1. Peel the carrots and onions, and cut off the ends of the zucchini. Vegetable casserole made from zucchini and carrots cooks quickly enough, so it is best to turn on the oven in advance to warm up to 180 degrees.
  2. Wash and dry the zucchini, grate on the finest grater, transfer to a bowl.
  3. Wash the carrots, dry, also grate on the finest grater and send to a bowl.
  4. Wash the onion, dry it, cut into small cubes and add to a bowl too.
  5. Pour about 300 ml of water into a saucepan, put on medium heat, and bring to a boil. Send the zucchini, carrots, and onions to a pot of boiling water, stir and simmer for a few minutes. After draining the water, cook the vegetables a little.
  6. Break eggs into a separate bowl. Wash the parsley, dry, and chop finely with a knife. Grate cheese on a coarse grater.
  7. Send chopped parsley and grated cheese to a bowl with eggs. Add oatmeal, salt, and pepper. To stir thoroughly.
  8. Put the mixture of eggs and oatmeal into a container with zucchini and carrots. Mix well.
  9. Grease a baking dish with vegetable oil. Transfer the squash and carrot mass with oatmeal into a mold and smooth with a spoon. Bake in an oven preheated to 180 degrees for about 35-40 minutes.
  10. The vegetable casserole made from courgettes, carrots, and oatmeal is ready. Cool it slightly in the pan, transfer it gently to a platter and serve. Such casserole, cooked without a single gram of flour, turns out to be very tender and juicy.
