Almond Petals Cookies

From my last trip, I brought a large package of almond petals. And, of course, less than a week had passed, and I came to you with cookies. This very tender, very airy, and very crunchy cookie deserves that you, my dears, strain and look for the same magic bag.

Cook: 1 hour

Ingredients

  • Egg yolk (raw, in dough) – 2 pcs
  • Butter (in dough) – 200 g
  • Cottage cheese (in dough) – 200-250 g
  • Wheat flour / Flour (in dough) – 2 stack.
  • Slaked soda with vinegar (in the dough) – 0.5 teaspoon.
  • Egg white (in meringue) – 2 pieces
  • Powdered sugar (or sugar, in meringue) – 1 stack.
  • The citric acid (on the tip of a knife in a meringue)
  • Almonds (petals, for sprinkling with meringues)

Directions

  1. Mix the yolks, softened (not melted) butter, and cottage cheese into a homogeneous mass. Then add a little flour. The dough should not be tight, it is better to sprinkle a little flour. I did not photograph this step – it is not interesting. Put the finished dough in the refrigerator for 10-20 minutes. Then we take it out, cut off the fourth part and roll it out not too thin. I cut out the mugs with a shot glass.
  2. Beat the cooled proteins with a mixer, gradually adding sugar (better, of course, powdered sugar). For better whipping, you can add citric acid. After cooking limoncello, I still had alcoholized lemon zest sprinkled with sugar. In her business! Put the zest and meringue on the mugs of cream, sprinkle with almond petals on top. One baking sheet took half of the entire dough.
  3. While the first portion was baking (at 160 degrees), I cooked the second – but in a slightly different way. Dashed off sausages, rolled bagels, then everything is the same, only without candied fruits
  4. The result exceeded all my expectations! Curd dough, as you know, cannot be spoiled, it turns out always and always very soft and tender. The meringue and dried petals are crispy, and all together are just the perfect combination of tenderness and taste.
  5. Unsweetened tender dough, fluffy sweet meringues, toasted crispy almonds are delicious! You can trust me!
