Okroshka with Pork Heart and Chives

Okroshka is everyone’s favorite summer dish! My version is okroshka on kefir, with boiled pork heart and chives, which have a delicate aroma and pleasant taste.

Ingredients

  • Pork heart (boiled) – 700 g
  • Potatoes (boiled) – 300 g
  • Cucumbers – 300 g
  • Radish – 300 g
  • Chicken eggs (boiled) – 5 pcs.
  • Chives bow – 1 bunch
  • Kefir 1% – 500 ml
  • Citric acid – 1 pinch
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare products for okroshka on kefir, with a pork heart. Boil the heart, potatoes, and eggs in salted water in advance. Wash the cucumbers and radishes, cut off the tails.
  2. Cut the cucumbers into small cubes.
  3. Cut the radish into small cubes.
  4. Peel the potatoes, cut into small cubes.
  5. Peel the eggs, rinse underwater. Cut into cubes.
  6. Cool the boiled heart, remove the remnants of veins and arteries, fat. Cut the meat itself into cubes.
  7. Combine all the okroshka ingredients in a saucepan, add salt, ground black pepper, and finely chopped chives to taste. Stir.
  8. Pour in kefir, stir. Add 1-2 pinches of citric acid to the meat okroshka on kefir to taste, add boiled cold water if necessary.
