Mediterranean Okroshka with Squid

Prepare Mediterranean okroshka as an alternative to the usual meat okroshka, replacing its meat component with squid. Okroshka with squid will acquire a new taste while retaining its freshness thanks to the yogurt and lemon dressing.

Ingredients

  • Squid – 200 g
  • Chicken eggs – 2 pcs.
  • Potatoes – 1 pc.
  • Cherry tomatoes – 3-4 pcs.
  • Fresh cucumber – 1 pc.
  • Dill and parsley greens – 10 g
  • Unsweetened yogurt (natural) – 3 tbsp
  • Boiled chilled water – 1 l
  • Lemon – 0.5 pcs.
  • Salt to taste
  • Black pepper – to taste

Directions

  1. We will prepare all the products for Mediterranean okroshka with squid. First of all, we will boil all the ingredients that we need to be boiled. Squid should be pre-cleaned from the chitinous plate and boiled in salted water (no more than 1 minute). Cool down. You also need to boil hard-boiled eggs (8-10 minutes) and peeled potatoes (20-25 minutes). Cool down.
  2. Cut the cherry tomatoes into halves or quarters. Cut the cucumber into small cubes.
  3. Place vegetables in a bowl.
  4. Peel the potatoes and eggs and cut them into small cubes.
  5. Transfer the chopped potatoes and eggs to the bowl with the vegetables.
  6. Cut the squid into half rings. Add them to the rest of the ingredients.
  7. Add unsweetened yogurt (ideally natural Greek) to a bowl. Add lemon juice, salt, and black pepper.
  8. Finely chop the dill and parsley greens and add to the okroshka. Pour in water. Mix well all the ingredients of okroshka with squid and again taste okroshka with salt, add salt if necessary.
